Aubergine & Mushroom Salmon en Croute
This is a great way to make a quick and easy lunch or supper dish using our tasty Aubergine & Mushroom Pesto. Try it!
4 pieces Salmon
1 jar Aubergine & Mushroom Pesto
1. Roll out puff pastry into squares (enough to fit 1 piece of salmon).
2. Spread Aubergine & Mushroom Pesto on to pastry.
3. Place salmon onto pastry, roll pastry over salmon and seal.
4. Egg wash pastry and cook in the oven Gas Mark 7 until cooked.
5. Serve with fresh green vegetables.
