Bajan Kitchen Supper Club November 2011

Thank you to all our our guests who came along to our Barbadian supper club last night.

We had a full house and it was great to meet some fabulous people!

Lots of laughs, eating and recipe swapping was had.

The homemade ginger beer drink went down a treat last night. From all the great feedback about this drink, we may start bottling it in future (you never know!)

The starter was a classic Bajan dish with a twist – Cou Cou and Fried Snapper. The Cou Cou (polenta) was cooked with Okra (Bajan style) and served with sauted red, yellow and green peppers.

I must say, the Bajan Beef stew and coconut rice was to die for. (Mom, you did a great job as always). The spices and flavours were amazing.

I think my favourite dish is the very simple Macaroni Pie. The Spiced Tomato Sauce which accompanied the dish was superb and very moreish!

The dessert, guava and apple crumble which was served with either vanilla cream or custard tasted fantastic. I preferred mine with Madagascar Vanilla cream umm..!
